0,5 oz green chilies, chopped
1 small yellow onion, chopped
4 eggs, egg yolks and whites separated
cup cilantro, chopped
1 red bell pepper, finely cut into strips
2 tomatoes, chopped
cup beef meat, ground and browned for 10 minutes
1 avocado, peeled, pitted and chopped
A drizzle of olive oil


Heat up a pan with some olive oil over medium-high heat, add half of the egg whites after youve whisked them in a bowl, spread evenly, cook for 1 minute on each side and transfer to a plate.
Repeat the process with the rest of the egg whites and leave the egg burritos to one side.
Heat up the same pan over medium-high heat, add the onions, stir and saut for 2 minutes.
Add chilies, bell pepper, tomato, meat, and cilantro, stir and cook for 5 minutes.
Add egg yolks, stir well and cook everything for 4-5 minutes more.
Divide the egg white burritos between 2 plates, divide the meat mixture, also divide the avocado, roll and serve for breakfast.
