Ingredients
• 2 cups water
• 2 bunches asparagus, trimmed and cut into 1 inch pieces
• 2 tbsps. vegetable oil
• 24 large fresh shrimp, peeled, deveined and cut in half lengthwise
• 2 tsps. chopped fresh ginger root
• 3 tbsps. soy sauce
• 2 tsps. granulated sugar
• 1 tsp. dry sherry
• salt to taste
Direction
• Heat two cups of water to a boil in a medium saucepan. Cook asparagus for
3 minutes in boiling water. Drain, putting aside 2 tbsps. of the liquid.
• In a skillet, heat the oil over medium-high heat. Sauté the shrimp pieces for
about 3 to 5 minutes until shrimp changes in color. Stir in asparagus and
reserved liquid, and add salt, sherry, sugar, soy sauce and ginger to taste.
Keep cooking for 5 minutes longer.
